Cooking for one can be challenging but you don’t have to compromise healthy food to do it. The key to cooking healthy meals for one or eight is the same; the key is planning. This simple dry erase board on the refrigerator is a great way to set your intentions for the next day. If you get hungry in between meals, snacks are available and if that doesn’t quite cut it, list a couple healthy rescue items.
The goal is to put good fuel into your body every day and nothing else. The best way to do this is to eat at home where you are in control of what is stocked in your pantry, refrigerator, and freezer. Even then, it’s hard to prepare single serving meals and fresh fruits and vegetables often go bad before you can finish them.
Instead of cooking single serving meals, cook larger meals once or twice a week and divide them into portions to freeze. Cook a meal, eat a portion, and freeze the leftovers in single portion sizes for future meals. The Foodsaver works amazing for freezing single portions. When I bring in vegetables from my garden, I vacuum/seal them to keep them fresh so I don’t waste a great harvest. When I fire up the grill, I’ll cook up a pound or two of meat then divide the leftovers up into single portions, vacuum/seal, and freeze them for future meals.
For those times when you do eat out, planning starts at the menu. Look at the menu online and choose what you are going to eat before you get there. Whenever you look at the menu, don’t ask, “What looks good?”, instead ask yourself, “What looks good for me?” Ask for a to-go box as soon as the waiter/waitress takes your order, so you can divide your portions up as soon as your food arrives. When you get home, vacuum/seal your leftovers for future meals.
